Answer: Mach 1 was founded by husband and wife duo Cassidy and Jillian Nolan first starting in their kitchen in Napa, CA. Cassidy, an honorably discharged veteran serving in the United States Marine Corps after five years operating in the Intelligence community and serving two combat deployments to Afghanistan, experienced his fair share of bland MRE's (Meals Ready to Eat) during training and deployment. Cassidy noticed the tiny hot sauce bottles provided in MRE's didn't offer flavor outside of heat and that many other fellow Marines and service members would consistently bring their own hot sauce with them on field exercises and deployments. Many years later, Cassidy wanted to create a sauce that would not only bring a bit of heat to dance on your tongue but also add flavor to enhance any food. The concept of an American hot sauce brand that offered new and innovative flavors was born. One with the right amount of heat that can pair equally with a MRE (Chicken Jambalaya is his personal favorite) or breakfast burrito. He found himself spending weekends and late nights creating the exact sauce he envisioned. He soon dragged his wife into his obsession asking her opinion. The perfect blend of spices and peppers that became our signature Mach 1 Hot Sauce was born. Excited by the creative process they went straight to work on the Mach 2 and Mach 3. With Cassidy's interest in military aviation and Jillian's love of flight from growing up going to airshows with her father as well as tagging along on weekends to a small airfield outside of Napa to watch him work on airplanes, they soon tied the sauces level of spiciness to the Mach speed and the aircraft innovation that achieved it. It perfectly combined two of their loves, hot sauce and human achievement in aeronautics making Mach 1 Hot Sauce what it is today.
